Break away from the usual confines of a stereotypical tea cake to try this deliciously moist and deep in flavour banana bread – perfect to pair with your cup of hot beverage in the evening.
3 overripe bananas 3 tablespoons miso paste ½ cup softened butter 1 cup brown sugar 2 eggs 1 teaspoon vanilla extract 1 ¾ cups all-purpose flour 1 teaspoon cinnamon powder 1 tablespoon baking powder Chocolate chips (optional)
Preheat your oven to 175°C while you mash the ripe bananas in a mixing bowl.
Add the miso paste, eggs and vanilla and whisk everything well to combine.
In a separate bowl, cream the butter and sugar thoroughly until you have an airy, fluffy mixture.
Add the banana mixture to the butter and sugar and mix well.
Add the remaining ingredients and top up with plenty of chocolate chips or sliced banana before baking in the oven for 60-70 minutes.
Check for doneness by piercing a knife through the centre and let it cool for a bit on a wire rack.
Slice and serve warm, along with a cup of tea or coffee.
