Mishti Doi is a traditional Bengali dessert made from sweetened, fermented yoghurt. It's known for its creamy texture and mild sweetness, often flavoured with caramelised sugar or jaggery. Typically served chilled, it's a festive and comforting treat.
1 litre full-fat milk 4-5 tbsp sugar 2 tbsp jaggery 2 tbsp yoghurt
Heat the milk in a large pan, simmer until it reduces to half, stirring occasionally.
In another pan, melt 4 tablespoons sugar on low heat until caramelized, then add this to the milk.
Add jaggery to the milk for extra sweetness, stirring until dissolved. Cool the milk slightly.
Once the milk is lukewarm, add 2 tablespoons of yoghurt, mix well, and pour into earthen pots for the traditional touch.
Leave it in a warm place for 8-10 hours or overnight until it sets.
Once set, refrigerate for a couple of hours before serving.
