Upma is a nutritious breakfast, but it can be made healthier if you replace semolina with millet. Using little millet or other grains, you can prepare a wholesome meal for your family and satiate your hunger with it.
1 medium onion ½ cup little millet 2 tbsp coconut 1 tbsp coriander leaves Salt to taste 1 cup water 1 tsp lemon juice, ginger ½ cup veggies 2 chopped green chillies ½ tsp mustard, jeera 7-8 curry leaves A pinch of hing 2 tbsp oil
Chop veggies of your choice. It can include French beans, carrots, cabbage, and corn.
Meanwhile, keep the little millet soaked in water for 15-20 minutes.
Heat oil in a kadhai, let mustard and cumin seeds splutter.
Add hing, sliced onions, green chillies, vegetables, hing, ginger, and curry leaves.
Saute the ingredients until the vegetables are 80% cooked. Pour water and little millet into kadhai.
Cook the ingredients for 5-7 minutes and garnish with lemon juice and coriander leaves.
