Millet salad made with many nutritious ingredients including veggies is perfect to add to your weight loss diet.
1/4 cup foxtail millet (soaked), 1 cup cooked rajma, 1/4 cup sprouts, 2 ripe tomatoes, 1 small cucumber, 1/2 carrot, 1/2 capsicum, handful coriander leaves, handful mint leaves, 2 tbsp olive oil, 1 tsp honey, 2-3 tsp lime juice, salt to taste, pepper to taste, 1/2 cup water
Pressure cook the millet with 1/2 cup water until done. Allow it to cool. Finely chop the veggies and add to the millet.
Add rajma and sprouts to the millet along with chopped coriander and mint leaves. In a bowl, mix olive oil, honey, lime juice, salt and pepper until completely blended.
Pour the dressing over the millet mixture and mix well. Serve at room temperature or chilled.
