Prepared with a variety of flavourful ingredients, this wholesome meal is an ideal addition to your weight loss diet.
1 tbsp ghee, 1 clove, 1 green cardamom, 1 inch cinnamon, 1 tsp cumin seeds, 1 tsp ginger, 1 tsp garlic, ¼ cup onion, 1 cup mixed vegetables, 2 slit green chillies, ½ cup chickpeas (cooked), ¼ tsp hing, ½ tsp red chilli powder, ½ tsp turmeric powder, ¼ tsp garam masala, ½ cup kodo millet, ¼ cup mint leaves, 1 tbsp roasted cashewnuts, 1 tsp lemon juice
Rinse millets, drain well and keep aside. To a pressure cooker, add ghee, clove, cardamom and cumin seeds. Then, add onions and vegetables.
Stir well and then add the spices. Now, add the millets. Stir well. Then, add water. Once the water comes to a boil, add the mint leaves.
Close the pressure cooker. Put the whistle on and cook for 2 whistles in medium to low flame. Let the pressure settle. Garnish with cashews and lemon juice. Serve!
