Millet kheer is the gluten-free version of the traditional Indian dessert, which is usually made with rice. To make it healthier you can use millets like bajra, ragi, foxtail millet, etc.
1 cup pearl millet (bajra) 2 cups milk 1/4 cup sugar 1/4 teaspoon cardamom powder 1/4 teaspoon saffron strands A pinch of nutmeg powder Ghee as required
Rinse the millet and soak for a few hours.
Heat some ghee in a pan and add soaked millet. Keep stirring.
Pour in milk and let the kheer simmer till the mixture thickens.
Stir in sugar, cardamom powder, and saffron strands.
Once the sugar dissolves, garnish with nuts and serve.
