If you follow food trends, then you already know the magic of Mexican Birria. These flavour bomb of a dish usually stews over several hours to get its signature style. The process becomes much simpler when using this crockpot recipe.
Though today it's a favourite of celebs and influencers, Birria began as a way to feed hungry farmers during a time of famine in Jalisco, Mexico.
1 kg mutton Salt and pepper to taste 1 tsp cumin 1 tsp dried oregano 1 onion, chopped 4 cloves garlic, minced 2 bay leaves 2 chipotle peppers in adobo sauce 1 cup beef broth 1/2 cup tomato sauce Warm tortillas, for serving Chopped onion, cilantro, and lime wedges for garnish
Season the meat with salt, pepper, cumin, and oregano. Sear it in a pan, then transfer to a crockpot.
Mix in chopped onions, garlic, bay leaves, and chipotle peppers.Pour in broth and tomato sauce.
Cook on low for 6-8 hours. Shred beef and serve with warm tortillas, onion, cilantro, and lime.
