Methi Pakoras are the usual pakoras with a fenugreek twist. Pakoras are gram flour fritters that are a popular street food as well as quick snacks. The addition of fenugreek leaves makes the pakoras tastier and healthier. You've found your perfect rainy day chai companion in methi pakoras. Here's the recipe for Methi Pakoras.

1 cup Gram flour (besan) 1/4 cup Rice flour Salt to taste 1/2 cup Methi Leaves (Fenugreek Leaves) 1 tsp Red Chilli powder 1/4 tsp Asafoetida (hing) 1/4 tsp Turmeric powder (Haldi) 1/2 tsp Ajwain (Carom seeds) 1/2 Tbsp Coriander (Dhania) Seeds , crushed Oil for deep frying

Seive out both the flours together with salt. Mix it with a ladle of hot oil and add the methi leaves, salt, red chilli powder, hing, turmeric powder, ajwain and coriander seeds and mix well. Add water very slowly and make a thick batter. Adjust the spice levels as per taste.

Heat oil in a pan and use a greased spoon or wet hands to drop small pakoras into the hot oil. Fry on medium heat, till golden brown and drain the pakoras on the kitchen towel.
