Relish in the fragrant delight of authentic Gujarati cuisine with this nutritious dumpling curry flavoured with fenugreek.

2 tsp finely chopped garlic ¾ cup finely chopped fenugreek leaves 1 cup besan 1 ½ tsp chilli powder 1 tsp coriander (dhania) powder A pinch of asafoetida (hing) Salt to taste 1 tsp oil for greasing
In a deep bowl, mix together the besan, fenugreek, garlic, chilli powder, coriander powder, asafetida, salt, and half a cup of water to make garlicky methi dhokli. Stir thoroughly until combined.
Use ½ teaspoon of oil to grease a thali with a diameter of 175 mm (7"), pour in half of the batter, and steam for 8 – 10 minutes.
To make one additional thali, repeat step. Before serving, slice the garlicky methi dhokli into diamond shapes.
