Megan Markle Aced This Low-Carb Zucchini Bolognese

Actress. Philanthropist. Royal. Megan Markle has many personas, including masterchef! Her vegetarian bolognese sauce is made with nothing but zucchini to make a creamy low-carb sauce. Even if the current royal scandal doesn’t interest you, this recipe should.

Ingredients

1 tbsp. extra-virgin olive oil 1 medium white onion, chopped 5 medium zucchini, chopped 1 chicken bouillon cube 500 gms pasta of your choice ½ lemon, juiced 1 stock cube Red pepper flakes Salt and pepper to taste Parmesan for serving

Step 1

In a pot over medium heat saute the onion until soft. Stir in zucchini, water and bouillon cube. Season with salt and pepper.

Step 2

Reduce heat to low and cover the pot. Cook for 4 hours, stirring often until the zucchini is falling apart.

Step 3

Boil a pot of salted water and cook pasta until al dente. Drain and add to the pot with zucchini.

Step 4

Add lemon juice, Parmesan, and pepper flakes and stir well to combine. Serve topped with more Parmesan.
