Medhu Vada is a crispy snack made of Urad Dal and is shaped like a donut. Vada dates back to centuries in Tamil Nadu and is an important addition to their cuisine.

1 cup whole urad dal 2 nos green chillies finely chopped 1/2 cup onion finely chopped 1/2 teaspoon ginger finely chopped 1 tablespoon curry leaves finely chopped A tiny pinch hing Salt to taste Chill water as required 1/2 teaspoon cumin seeds

Rinse 1 cup urad dal well to remove the starch coating. Rinse at least 2 times then drain water and soak it again, undisturbed,for 2 hours. Then, grind it in a mixer by occasionally adding cold water to it.
Transfer the batter to a bowl whisk it for 1-2 mins. Add a pinch of batter to a bowl containing water. If it floats, then it's the perfect consistency.

To the batter, add 1/2 cup finely chopped onion, 2 small green chillies finely chopped, 1/2 tsp ginger, 1 tblsp curry leaves, salt to taste and a pinch of hing. Mix it well until evenly distributed.

Take a portion of batter add it to the back of an oiled strainer and slightly flatten it. Make a dent in the middle and dip it in preheated oil. Fry them until golden brown on both sides. Your crispy Medhu Vada is ready!
