Protein-packed, slightly tangy and absolutely delicious, this Mexican cuisine-inspired Rajma Tomato soup is filling, nutritious and perfect for autumn evenings. Check out the recipe now.

1 cup rajma, boiled 2 cups tomato, chopped 1 red capsicum, chopped 1 onion, chopped 2 garlic cloves, minced 1 tsp red chilli powder Salt, to taste Black pepper, to taste 1 tbsp oil 3 cups vegetable stock Coriander leaves, chopped

Heat oil in a large pot, then add the minced garlic, onions, tomato and capsicum.

Saute everything for 10 minutes, then add red chilli, salt, pepper and the kidney beans.

Saute the soup mix for another 10 minutes then mash the ingredients slightly.

Add the stock, mix well and simmer the Rajma Tomato soup until done.

Place the Rajma Tomato soup in bowls, garnish with coriander leaves and serve hot.
