While aloo samosa is a staple, matar samosa is a unique and delightful twist to the deep-fried snacks. Subtly sweet and spiced green peas are stuffed inside the pastry which is later sealed and tossed into a kadhai with hot oil. Here is how you can make it at home.
1 tbsp ghee 2 cups peas ½ cup curd Water as needed 1 cup maida Salt to taste 1/2 tsp red chilli powder 1/4 tsp garam masala Oil for frying ¼ tsp cumin seeds 1 tbsp coriander leaves 1 tsp coriander powder ¼ tsp turmeric
Heat ghee in a saucepan and add cumin seeds to it.
Once seeds start to splutter, add peas and turmeric powder.
Let the peas cook while you knead maida with curd, water, and a pinch of salt.
Add powdered spices to peas and wait for them to turn soft.
Roll a small amount of dough, stuff it with the peas mixture, and seal it.
Deep-fry matar samosas in hot oil until they are crispy.
