During winter, one dish that trumps all the savouries is matar kachori. Deep-fried kachoris with a spiced filling of peas is a must-have when the weather outside is forcing you to stay inside. Here is its easy recipe.
2 cup peas Salt to taste 1-inch ginger ½ tsp cumin, red chilli 1 chopped green chilli ¼ tsp turmeric, garam masala 1 tsp coriander 1 tbsp oil 1 tbsp coriander leaves 1 cup flour Water as needed Oil for frying 1 tsp pav bhaji or chhole masala
Wash peas thoroughly and keep them aside.
Heat a pan and add oil to it. Sprinkle cumin seeds and turmeric powder.

Saute ginger and green chillies. Drop in peas.
After 5 minutes, add spices along with a splash of water. While peas cook, knead a soft dough.
Once peas are cooked, mash them, and let the mixture cool before stuffing kachori.
Deep-fry matar kachori and enjoy them with your favourite chutney or raita.
