Made with all-purpose flour and a spicy peas filling, this crispy, flaky and deep-fried pastry is perfect to enjoy during winters with some spicy coriander chutney. Here is an easy recipe to make matar kachori at home.

1 ½ cups refined flour, 1 cup green peas, salt to taste, 5 tbsp desi ghee, oil for deep-frying, for stuffing: 1 tbsp oil, 1 tsp cumin seeds, 1 tsp coriander seeds, ½ tsp fennel seeds, 2 green chillies, 1 cup green peas, asafoetida, 1 tbsp split Bengal gram, 1 tbsp garam masala, ½ tbsp chaat masala, salt to taste, fresh coriander leaves

Add all-purpose flour, salt, ghee in a bowl and mix well. Knead the dough with water. Cover with a cloth and set aside for an hour.

Heat oil in a pan, sputter cumin, coriander seeds, fennel seeds and green chillies. Sauté for 30 seconds and add crushed green peas and asafoetida and mix.

Add chana dal powder, garam masala, chaat masala and salt. Mix well. Remove from heat. Add coriander leaves and divide into 12 equal sized balls.

Stuff it with the mixture and seal the edges. Roll out lightly and deep-fry kachoris on medium heat until brown. Drain and serve with a chutney.
