Lassi is a cooling, refreshing, probiotic drink from northern stats of India made by blending curd or yogurt with water, salt or sugar and a few spices or herbs. This Masala lassi is a tantalising version with a hint of spice to it.
2 cups curd – cold and fresh 3 -4 green cardamoms – seeds crushed ¼ tsp crushed black pepper 1-2 pinches grated nutmeg or ground nutmeg 2 tbsp chopped nuts of your choice 10-12 saffron strands 5-6 tbsp chopped palm sugar or jaggery ⅓ to ½ cup water
Add curd, green cardamon seeds, black pepper, nutmeg and nuts in a blender. Add the saffron strands and jaggery as well followed by water.
Blend until smooth and frothy. Check the taste and add more palm sugar if needed and blend again.
Serve fresh topped with a few saffron strands or chopped nuts.
