This is a delightful twist on the classic Karela sabzi with the tangy addition of tamarind. Masala Karela offers a burst of zesty flavours with a spicy goodness and bitter taste of bitter gourd in every bite.

500 gm Bitter Gourd (Karela) 3 tbsp oil ½ tsp Turmeric Powder Salt 2 tbsp Red Chilli Powder 9-10 cloves of garlic (crushed) ¼ cup sesame seeds ½ tsp cumin seeds ½ tsp mustard seeds Soak 1/8 cup tamarind in water and discard the fibre Water 4 cups

Wash the karela properly, slit it and keep it aside. Boil some water, add salt and add the slit bitter gourd.

Cook until the bitter gourd is soft. Meanwhile, dry roast sesame seeds until aromatic. Pound the sesame seeds in a mortar pestle.

Heat oil in a kadai, add cumin and mustard seeds. Add crushed garlic and mix. Add the sesame seeds and tamarind water. Add all the spices (red chilli powder, turmeric and salt).

Cook for 2 minutes and add the bitter gourd. Cover and cook till it releases oil.

Serve warm or at room temperature.
