As the temperatures soar and the sun beats down mercilessly, the craving for a cool, refreshing dessert becomes almost irresistible. Enter the mango souffle - a heavenly creation that perfectly captures the essence of summer.
1 1/2 cups mango puree 3 large egg whites 1/2 cup white sugar 1/4 teaspoon cream of tartar Pinch of salt
Preheat oven to 375°F. Grease a 6-cup soufflé dish or individual ramekins.
In a large bowl, beat the egg whites with cream of tartar and a pinch of salt.
Gradually add the sugar, beating continuously until stiff, glossy peaks form.
Gently fold the mango puree into the whipped egg whites until just combined.
Spoon the souffle batter into dish(es) and bake for 15-18 minutes.
Serve immediately, as the souffle will begin to deflate shortly after removal from the oven.
