Made with yummy and juicy mangoes, this delicious salad is perfect for summer.
2 large mangoes 2 cucumbers 1 medium onion ½ cup cilantro, chopped ½ cup roasted peanuts 2 to 3 tablespoons white balsamic vinegar 1 to 2 tablespoons olive oil Salt to taste
Peel and cut the mangoes and cucumbers into 2-inch sticks. Thinly slice the onion.
Add chopped mangoes, cucumbers and onion to a bowl. Stir in white balsamic vinegar and olive oil.
Mix well. Garnish with cilantro and chopped peanuts. serve immediately or chill and serve.
