Mango rice is a tasty and tangy South Indian meal made with cooked rice, grated raw mango, and a mix of fragrant spices. It has a unique blend of tastes that are both refreshing and filling.
To make fluffy rice, boil 1 cup of rice in 2 cups of water for 20 minutes. Leave it to cool down.
Heat 2 tablespoons of oil with 1 teaspoon of mustard seeds in a frying pan. Allow them to sputter.
Put in a pinch of asafoetida and a tablespoon each of chana dal and urad dal. To a golden crispness, fry.
Now stir in a couple of dried red chiles, a few curry leaves, and a quarter cup of peanuts. Toss in a pan and heat for a minute.
Mix in 1 grated raw mango, 1 green chilli, and a pinch of salt. Time it for two to three minutes and you'll be good to go.
At last, stir in the finished rice. Use fresh coriander leaves as a garnish and enjoy hot.
