Rabdi is a traditional milk-based dessert made by thickening milk and this variation of the dessert adds the refreshing flavour of mango to the mix. Here's a recipe for you to try:
1 litre full-fat milk 1 cup mango pulp 1/2 cup sugar 1/4 tsp cardamom powder 8-10 saffron strands (optional) 1/4 cup chopped nuts (almonds, pistachios) 1/4 cup chopped mango pieces
Simmer milk until it reduces by half (30-40 mins), stirring frequently.
Stir in sugar, cardamom, and saffron (if using).
Cool slightly, then mix in mango pulp.
Refrigerate for 2-3 hours. Garnish with nuts and mango pieces before serving.
