Nothing spells the arrival of summer better than ripe, fragrant mangoes that dot the market. This paani puri recipe, that utilises both – raw and ripe mangoes, is sure to be a repeat hit in your household during the season.
1 raw mango, sliced 1 ripe mango, sliced 1 onion, diced ½ cup fresh mint leaves ¼ cup fresh coriander 2 teaspoons cumin powder 1 teaspoon chaat masala 2 teaspoons amchur powder 3 green chillies 1-inch piece ginger 3 tablespoons sugar Water, as required Salt, to taste 10-12 ice cubes 1 cup boondi, soaked
Combine the mangoes, mint, onion, coriander, green chillies and ginger in a blender and turn into a smooth paste.
Add the sugar, cumin and amchur powder, and salt before blending once again.
Transfer the contents to a large mixing bowl and dilute with water till you get the desired consistency.
Mix in the chaat masala, salt and ice cubes to chill the paani and allow the flavours to mingle for some time in the refrigerator.
Serve with puris that are stuffed with soaked boondi and enjoy.
