Aam Ka Murabba, also known as Mango Murabba, is a dish made from raw mango preserve that is sweet, tart, and fragrant. It is gluten-free and vegan.
2 mangoes unripe, green and large 1.5 cups raw sugar or jaggery 4 to 5 green cardamoms 1 to 2 cloves 12 to 15 saffron strands
To start with prepare the raw mangoes wash them thoroughly and peel them. Grate the mangoes accordingly.
Now Powder cardamoms and cloves in a mixer. Take a pan, add grated or mangoes and sugar.
Now add sugar accordingly Now Switch on the heat. Stir the mango-sugar mixture very well.
On low heat, cook the mango-sugar mixture. Initially the sugar will melt and consistency will be watery.
Stir often so that the sugar does not crystallize and keep on simmering the mixture.
Keep on stirring and cooking till you get a 2 thread consistency. Turn off the heat.
Add the powdered cardamom and clove mixture and saffron (crushed). Mix very well.
Now Cool it completely store in a glass jar. Serve Mango Murabba with meals and with roti or paratha.
