Enjoy the last of the mangoes in the summer by making batches of this delicious salsa that can be added to lunch wraps, salads, rolls or eaten as is, with chips.
1 avocado, cubed 1 mango, cubed 1 onion, chopped 1 tomato, chopped 3 tablespoons freshly chopped coriander 2 jalapenos, finely chopped Juice of 1 lemon 2 cloves garlic, minced 1 tablespoon olive oil Salt and pepper, to taste
Mix together the garlic, lemon juice, salt, pepper and olive oil in a small bowl.
Add the remaining ingredients to a large mixing bowl and drizzle the reserved dressing.
Mix well to combine but be gentle so as to not break up the mango or avocado.
Serve with chips or refrigerate in a jar until ready to be eaten.
