Mangalorean Prawn Ghee Roast: A Wholesome Monsoon Dinner

Being popular in the coastal regions of India, this seafood recipe is perfect for dinner when paired with neer dosa or Malabar parotta. Here is an easy recipe to make Mangalorean style prawn ghee roast at home.

Ingredients

For Masala Paste: 2 ripe tomatoes, 7 cloves of garlic, 1 inch of ginger, 2 teaspoons of black pepper, 1 teaspoon fennel seeds Other Ingredients: 2 onions, 1 teaspoon red chilli powder, 1 teaspoon of turmeric powder, 1 teaspoon of salt, 2 teaspoons vegetable oil, 2 sprigs of curry leaves, 4 teaspoons of ghee, 250 g of cleaned, de-veined prawn

Step 1

Grind all the masala ingredients to a smooth paste. Set it aside. Take a pressure cooker and add onions, ground masala, chilli powder, turmeric powder, salt, oil, and 3 tbsp of water.

Step 2

Cover the pan and cook for 7 minutes on medium heat. Remove the pan from the heat and set it aside. Take a pan and add the cooked masala and the prawns.

Step 3

Add in the curry leaves and 2 tbsp of ghee. Sauté the mixture for 5 minutes. Add in 2 more tsp of ghee and roast till the prawns are completely cooked. Serve hot.
