Paneer ghee roast is the vegetarian version of a popular South Indian dish from the Mangalore coastal region in Karnataka. This flavourful curry features pan-fried paneer cubes in spicy, aromatic gravy. The unique combination of whole spices and coconut milk creates an unforgettable rich and tangy taste.
250g paneer, cut into 1-inch cubes 2 tablespoons vegetable oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds 5-6 curry leaves 1 onion, sliced 1-inch ginger, minced 2 green chilies, slit 1 teaspoon chili powder 1/2 teaspoon turmeric 1 cup coconut milk Salt to taste
Heat oil in a pan over medium heat. Add mustard seeds and let them pop
Add cumin seeds, curry leaves, onions, ginger and green chilies. Sauté for 2-3 minutes.
Add the paneer cubes and fry for 2-3 minutes until lightly browned on all sides.
Add chili powder, turmeric, salt and coconut milk. Bring to a boil.
Reduce heat to low, cover and simmer for 5 minutes, allowing flavors to blend.
