A revitalising blend of heritage and wellness, Mandia Pej is a probiotic beverage hailing from Odisha. Culturally significant and nutritionally beneficial, this beverage is made using fermented rice water and finger millet.
1 cup cooked rice 4 tbsp finger millet (ragi) Salt to taste 3 glasses of water 1 teaspoon ghee
Cook rice in a pot with one glass of water until soft. Soak finger millet in half a cup of water for 30 minutes.
Add soaked millet to the pot and cook for another 10-15 minutes. Stir in one more glass of water gradually to avoid lumps.
Adjust consistency, add salt, and a teaspoon of ghee for flavour. Serve hot and savor the nourishing goodness of Mandia Pej.
