As a main trade hub, Malwa cuisine bears strong influences from neighbouring states, namely Gujarat, Maharashtra, and Rajasthan, and now has a blend of royal Mughal fare and unique street foods.
Murgi Suvedar is a richly prepared dish featuring chicken cooked with almond and cashew paste, poppy seeds, and thick coconut milk.
Across the region, people enjoy Bhutte Ka Khees, a dish made from grated corn roasted in ghee and cooked in milk with spices.
Dal Bafla is a traditional bread made from wheat flour. It's formed into small balls, boiled, roasted, and then dipped in ghee before serving.
Crunchy on the outside, soft on the inside, it's made with spices and meat, rolling them into balls, stuffing with onions, and coating with poppy seeds.
Gosht Halwa is a slow-cooked, rich dish from royal kitchens. It's prepared with pounded lamb, milk, khoya, sugar, and flavoured with saffron and cardamom.
Malpua is a sweet pancake made from flour, milk, and cardamom, often served with rabri.
Chakki ki Shaak is a delicious curry made from steamed wheat flour dumplings in a flavourful sauce.
