Malpua is a traditional Indian sweet made during festivals and offered as bhog to the gods. During Navratri, this is made without grains or maida flour, so perfect for fasting. Here is how to make this Navratri special Malpua:
1 cup singhare ka atta 1 ripe banana ½ cup milk ½ cup sugar ¼ cup water A pinch of cardamom powder 2-3 strands of saffron Ghee Chopped pistachios and almonds
In a bowl, mix singhare ka atta, mashed banana and milk. Whisk well to form a smooth batter.
In a separate pan, dissolve sugar in ¼ cup water. Add cardamom powder and saffron strands. Boil until it reaches a one-string consistency.
In a deep pan, heat ghee on medium flame. Pour a ladle of batter into the hot ghee. Fry until the edges turn golden brown and crisp.
Once fried, dip each malpua into the warm sugar syrup for a few seconds.
Garnish with chopped pistachios and almonds.
