Ghee is found in every Indian household and has been a staple for millennia. It is also known as clarified butter and is used in multiple sweet and savoury preparations. So, here's an easy recipe for you to master the art of making homemade ghee from malai. Keep reading to learn more.

1-litre malai

Begin with cold cream or malai. Use a hand blender to churn it in a bowl until it separates into butter and liquid.

Drain the butter through cheesecloth over a sieve, collecting the buttermilk for later use.

Press out any excess liquid from the butter and wash it with ice-cold water to remove any sediments.

Heat the butter in a pot on the stove until melted, then let it boil and simmer for 20-25 minutes.

Cook until the butter turns clear, and stops foaming, and the milk solids at the bottom turn brown.
