Malabar Mathi Curry is a traditional South Indian delicacy featuring tender sardines in a rich coconut and spice-infused gravy, cherished for its unique flavours and enjoyed best with steamed rice or crispy dosa.

½ kg sardines 1½ inch ginger ½ cup grated coconut 2 red chillies 2 tbsp Coconut Oil 3 shallots 1 large green chilli 150 gms tamarind paste Handful of curry leaves ½ tsp turmeric 1 tsp red chilli powder ½ tbsp Mustard Seeds Salt, as needed

Blend coconut and turmeric into a thick paste with a touch of water.

Sauté green chillies and ginger in coconut oil. Add red chilli powder, tamarind paste, and salt.

Cook for 2-5 mins. Add ground paste and cook for 5-7 mins.

Add cleaned fish to thicken curry. Cover and heat for 5 mins.

In a separate pan, sauté mustard seeds, curry leaves, red chillies. Pour over curry. Add shallots. Cook for 1 min and turn off.

Garnish with coriander and fried curry leaves. Serve hot with rice or dosa.
