Makki Aata Cake: A Crumbly Sweet Tea Time Treat

Move from the usual banana-walnut or marble cakes to make this bright yellow, mildly sweet cake as an accompaniment for chai or coffee.

INGREDIENTS

1 cup makki aata ½ cup all-purpose flour 1 tablespoon baking powder 1 cup buttermilk ½ cup milk 1 egg ½ teaspoon baking soda ¼ cup melted butter 2 tablespoons honey Salt, to taste

METHOD

Preheat the oven to 200 degrees Celsius while you combine the dry ingredients together in a mixing bowl.

Whisk the buttermilk, milk and egg together and pour into the dry mixture and stir to combine.

METHOD

Melt the butter and add it to the batter, along with the honey before folding everything together for the last time.

METHOD

Heat enough oil or butter to cover the bottom of a cast iron skillet and pour in the batter once it reaches smoking point.

METHOD

Stick the hot skillet into the oven and bake for 20-25 minutes, until the edges are crispy.

METHOD

Once cooked, drizzle more honey on top and serve warm with tea or coffee.
