A popular Bengali dessert, rosogolla is a spongy, soft treat that is soaked in sugar syrup and made from chhena, an Indian cottage cheese. Here’s how to prepare at home.
1 litre Full Cream Milk 2 tablespoons Lemon Juice 1 cup Sugar 4 cups Water 2-3 drops Rose Water (optional)
Boil the milk. Once it boils, add lemon juice to curdle the milk. Strain using a muslin cloth and wash the chhena under cold water. Squeeze out excess water.
Knead the chhena until smooth and soft. Make small, smooth balls from the dough.
In a large pot, boil water and sugar until the sugar dissolves. Add rose water if using.
Gently add the chhena balls to the boiling syrup. Cover and cook for 15-20 minutes, allowing them to puff up.
Let the rosogollas cool in the syrup. Serve chilled or at room temperature. Enjoy your homemade rosogollas!
