Making Punjabi Style Chole? A Step-By-Step Guide To Follow

While Chole or Chana is loved all over India, it is particularly popular in North-Indian homes. Made with spices, the curry is usually spicy and tangy and best eaten with bhaturas, paratha or rice. Though the list of ingredients is long, this dish is fairly easy to make.

Ingredients

1 cup chickpeas, soaked overnight 2 onions 2 tomatoes 1 tbsp ginger-garlic paste 2-3 green chillies 2 tbsp oil or ghee 1 tsp cumin seeds 1 bay leaf

1 tsp turmeric powder 1 tsp red chilli powder 2 tsp coriander powder 1 tsp cumin powder 1 tsp garam masala 1 tsp dry mango powder (amchur) Salt Fresh coriander leaves Lemon wedges

Step 1

In a pressure cooker, add chickpeas, water, and a pinch of salt. Cook for 6-7 whistles until tender. 

Step 2

Heat oil or ghee in a pan. Add cumin seeds and bay leaf. Add onions and cook until golden brown. Add ginger-garlic paste and green chilies. Add tomatoes and cook until soft.

Step 3

Add turmeric, red chilli powder, coriander powder, and cumin powder. 

Step 4

Add cooked chickpeas along with some of the cooking liquid. Simmer for 15-20 minutes.

Step 5

Add garam masala and amchur powder. Cook for 2-3 minutes. Garnish with coriander leaves.
