Once prepared or bought, storing Mishti Doi properly ensures it stays fresh, maintains its flavor, and preserves its texture. Traditionally, Mishti Doi is set and stored in earthen pots or “matkas.” These pots help keep the dessert cool naturally, preserving its flavor for longer periods. The porous nature of the pots allows excess moisture to evaporate, which thickens the doi while enhancing its rich taste. Once set, cover the pot with a lid or a piece of muslin cloth to protect it.
If you’ve prepared or bought Mishti Doi in bulk, transferring it to airtight containers and refrigerating is one of the best methods for storing. This keeps the doi fresh for up to 4-5 days without compromising its flavor. Be sure to store it in the back of the fridge, where the temperature is the most consistent.

When you’re ready to eat it, allow the Mishti Doi to thaw in the refrigerator for a few hours. While freezing can slightly alter the texture, the flavor will remain intact.
