Kheer, a traditional Indian rice pudding wh9ch is made during various festivals and loved during Diwali. Made with creamy milk, aromatic basmati rice, and flavoured with cardamom and nuts, this delightful dessert symbolises abundance and festivity, making it a must-have treat to celebrate the festival of lights.
1 cup rice 4 cups full-fat milk 1/2 cup sugar 1/4 tsp cardamom powder 1/4 cup chopped nuts (almonds, cashews, pistachios) 2 tbsp raisins 2 tbsp ghee Saffron strands
Soak rice in water for about 30 minutes. Drain and set aside. In a pot bring the milk to a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom.
Add the soaked and drained rice to the milk. Reduce the heat to low and let it simmer.
After about 15-20 minutes, when the milk has thickened, add sugar, cardamom powder. Mix well and continue to cook for another 5-10 minutes.
In a separate small pan, heat ghee over medium heat. Add the chopped nuts and raisins, and sauté until the nuts are golden and the raisins are plump. Add this mixture to the kheer and mix well.
Allow the kheer to simmer for a few more minutes. Remove it from the heat and let it cool slightly.
You can serve it warm or chilled, garnished with saffron strands and additional chopped nuts.
