Khasta kachori is the perfect deep-fried snack to prepare on Holi. It has a long shelf-life and can be paired with beverages you will serve your guests during celebrations. The primary struggle is to get the texture and flavours right. Here is a quick recipe that you can follow.
½ cup moong dal ¼ teaspoon turmeric powder ½ teaspoon cumin powder 1 teaspoon coriander powder ½ teaspoon red chilli powder 1 teaspoon dry mango powder Salt to taste ½ teaspoon dry ginger powder ½ teaspoon cumin powder 1 teaspoon crushed fennel seeds ¼ cup ghee or oil 2 cups all-purpose flour
Soak moong dal for a couple of hours, drain the grains, and grind them.
On a pan, heat ghee, and roast spices in it along with the coarse paste of moong dal.
Knead the dough using ghee, salt to taste, carom seeds, and water as required.
Roll small portions of dough, add moong dal filling, flatten the dough, and roll into small circles.
Deep-dry kachori until both sides are golden brown and crispy. Drain excess oil and store it.
Enjoy khasta kachori with pickles, thandai, and kanji.
