Makhana ki sabzi is a perfect fasting dish, offering a light yet flavourful option during vrat. Made with roasted foxnuts and spiced yoghurt-based gravy, it’s both nutritious and satisfying. The subtle crunch of makhanas makes this dish delicious and wholesome for fasting days.
1 cup makhana (foxnuts) 1 cup yoghurt 2 tomatoes 1 tsp cumin seeds 1 tsp red chilli powder 1 tsp coriander powder ½ tsp turmeric powder ½ tsp garam masala 2 tbsp oil or ghee Fresh coriander Salt
Heat 1 tablespoon of ghee in a pan and roast the makhanas until they turn crisp and golden. Set aside.
In the same pan, heat oil or ghee. Add cumin seeds and let them splutter. Pour in the tomato puree and cook until the oil starts to separate from the mixture.
Add turmeric, red chilli powder, coriander powder, and salt. Mix well and cook for a few minutes until the masala is well cooked.
Whisk the yoghurt and add it to the masala. Stir continuously to avoid curdling. Let it simmer for 5 minutes on low heat.
Add the roasted makhanas to the gravy and mix well. Let it cook for another 5-7 minutes.
Sprinkle garam masala and garnish with fresh coriander leaves.
