Adai dosa, a nutritious South Indian dish, is a protein-packed rice and lentil crepe. It's perfect for a wholesome breakfast when paired with sambar and chutney.
½ cup rice (regular or idli rice) ¼ cup chana dal ¼ cup urad dal ¼ cup tuvar dal 2 dry red chilies (seeds removed) Water 1.5 tsp chopped ginger
1 pinch asafoetida (hing) 1 chopped green chili ½ tsp cumin seeds ⅓ cup finely chopped onions 2 tsp finely chopped curry leaves ¼ cup chopped coriander leaves Salt & Oil as required
Rinse and soak rice, dals, and red chillies in 1.5 cups water for 2-3 hours. Drain the water and grind soaked ingredients with ginger, hing, and water to a semi-coarse batter.
Transfer batter to a bowl, cover, and let it rest for 20 minutes to 2 hours. Mix in chopped onions, coriander, curry leaves, grated coconut, and salt.
Heat a skillet, spread oil, and pour a ladle of batter in a circle. Drizzle oil in the centre and sides, cooking on medium heat until golden brown.
Flip and cook the other side until golden brown spots appear, then serve hot.
