Nolen gur sandesh is an un-missable winter treat if you’re a dessert lover. But instead of store-bought mithai, make your own with fresh paneer and gur. If you don’t have access to fresh nolen gur, opt for liquid bottled versions that are widely available.

2 cups fresh paneer (chhena or chhana) 1/2 cup Nolen Gur (date palm jaggery) 1/4 teaspoon cardamom powder Chopped nuts for garnish (optional)

Make fresh paneer at home. Grate or finely chop the Nolen Gur. Now, combine the paneer and grated Nolen Gur and mix well.

Transfer the mixture to a non-stick pan and cook on low heat. Keep stirring continuously to prevent it from sticking to the pan. Cook until the mixture thickens

Add cardamom powder and continue to cook until the mixture reaches a denser consistency that can be shaped into sandesh.

When it’s ready, take it off the heat and allow it to cool for 20 minutes. Shape the mixture into small round sandesh or press it into moulds

Allow the sandesh to cool completely and then refrigerate for at least an hour before serving. Chilling helps it firm up and enhances the flavour of the gur

Once chilled, your Nolen Gur Sandesh is ready to be served. You can garnish it with chopped pistachios or almonds.
