Use fresh winter carrots to make this instant Gajar Ka Halwa by cooking grated carrots with milk, sugar, ghee, and cardamom. It’s garnished with nuts and raisins and makes for a rich, flavourful treat perfect for any occasion.
2 cups grated carrots (fresh and finely grated) 1/2 cup full-fat milk 1/4 cup sugar 2 tbsp ghee 1/4 tsp cardamom powder 1/4 cup chopped nuts (cashews, almonds, or pistachios) 1 tbsp raisins
In a non-stick pan, heat 1 tablespoon of ghee. Add the grated carrots and sauté for 2-3 minutes until they soften slightly.
Pour in the milk and stir well. Cook on medium heat until the milk is absorbed and the carrots are tender (about 5-7 minutes.
Add sugar and cardamom powder. Stir continuously to mix the sugar evenly and cook for another 5 minutes, allowing the mixture to thicken.
Once the halwa reaches a pudding-like consistency, add the remaining ghee and chopped nuts. Stir and cook for an additional 2-3 minutes.
Garnish with raisins and additional nuts if desired. Serve warm.
