Curd rice is a South Indian dish that has become staple of every household. It is an easy-to-make recipe that can be made with leftover rice, curd and some spices and can be made under 10 minutes. It is beneficial for the one who are planning for a weight loss journey. Take a look at the recipe here:

½ cup leftover rice 2 cups curd 1 tsp mustard seeds 1 tsp urad dal 10 curry leaves ½ tsp hing 2 tsp roasted peanuts 1-inch ginger 2 tbsp coriander leaves 1 dry red chilli ¼ cup pomegranate seeds Salt to taste Black pepper to taste ¼ tsp black salt

Whisk curd in a mixing bowl and set it aside.

Add leftover rice to it and give it a mix. Add salt, black pepper, black salt, coriander leaves, peanuts and minced ginger. Mix verything well.

Heat 2 tbsp of oil in a pan. Add dry red chillies, mustard seeds, urad dal and curry leaves. Let the tadka splutter.

Pour the tadka over the curd and rice mixture. Cover with a lid so that the aroma is trapped. Let it stay cover for over 5 minutes.

Add pomegranate seeds, add salt if required. Give it a gentle mix again. Your curd rice is ready.
