Ghugni is a popular Indian street food made with dried yellow peas or white peas. It is especially popular in West Bengal, Bihar, Odisha, and Assam. It is easy to make, delicious and nutritious. It can be comforting during the cold, rainy months. Here’s an easy recipe to make the dish at home.
1 cup dried yellow peas or white peas 1 onion 2 tomatoes 1-2 green chilies 1-inch ginger 4-5 garlic cloves 1 tsp cumin seeds
1 tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala 1 tsp red chilli powder 1-2 bay leaves
Soak the dried yellow or white peas overnight, drain them and add them in a pressure with 3-4 cups of water, and a pinch of salt. Cook for 3-4 whistles.
In a Kadhai, heat oil. add cumin seeds and bay leaves. Add chopped onions and sauté. Add ginger and garlic and then add chopped green chilies and tomatoes, and cook until the tomatoes are soft.
Add turmeric powder, cumin powder, coriander powder, red chilli powder. Add the cooked peas to the masala and let it simmer for 10-15 minutes.
Sprinkle garam masala on top. Garnish with finely chopped onions, tomatoes, green chilies, coriander leaves and sev.
Ghugni can be enjoyed on its own as a snack or served with bread, poori, or rice.
