Make Turkish Scrambled Eggs For Weekend Breakfast

Also known as menemen, this Turkish-style egg dish is best paired with fresh or toasted bread for breakfast. Make it at home with this simple recipe.

Ingredients

2 eggs, 1 onion, 1 tomato, 1 tomato puree, ½ green bell pepper, 1 tsp chilli flakes, 1 tsp oregano, ½ tsp pepper, salt to taste, 2 tbsp olive oil, 1 tsp parsley

Step 1

In a mixing bowl, beat the eggs with salt and pepper and keep it aside. In a medium saucepan, heat oil and add chopped onions and green chillies. Sauté for 2 minutes.

Step 2

Next, add both tomatoes (pureed and chopped) and mix well. Then add chilli flakes, oregano, salt and bell pepper.

Step 3

Sauté until the tomato softens a little and finally, add the beaten eggs to it. Spread and scramble the mixture lightly for 2-3 minutes. Garnish with parsley and serve hot with some bread.
