Lauki, or bottle gourd, is a summer vegetable that surprisingly makes a great dessert. Punjabi lauki halwa combines the subtle sweetness of the vegetable with ghee and sugar, resulting in an indulgent dessert.
2 cups grated lauki ¼ cup ghee 2 tablespoons chopped cashews 2 tablespoons chopped almonds 2 tablespoons raisins ½ cup milk ¾ cup sugar ¼ teaspoon cardamom powder
Rinse, peel, and grate a lauki. Take a pan on low heat and let some milk simmer till it thickens.
In another pan, heat ghee and fry cashew nuts, almonds, and raisins. Set them aside.
Add grated lauki to hot ghee and keep stirring till the vegetable shrinks.
Once the lauki is cooked, add simmered milk, sugar, and cardamom powder.
Stir for about 15-20 minutes till the volume decreases. Add fried nuts and mix well.
Serve it warm or chilled as per your preference.
