Hilsa Fry is a traditional delicacy, featuring hilsa steaks deep-fried in mustard oil until crunchy and golden, served with a drizzle of the fragrant oil and green chillies for added flavour.
2 pieces of hilsa steaks (3 cm thick) ¼ tsp. turmeric ½ tsp. salt 2 green chillies Mustard oil for frying
Coat the hilsa steaks with salt and turmeric thoroughly. Heat mustard oil in a kadai until it smokes and turns pale yellow.
Reduce the heat and let the oil stop smoking. Carefully add the hilsa steaks to the hot oil.
Fry the fish until each side is browned. Add green chillies towards the end for extra flavour.
Drain the fish and serve with hot rice, green chillies, and a drizzle of the frying oil.
