Simui-er Payesh is a traditional Bengali dessert, especially popular during Durga Puja. Made with vermicelli, milk, and dry fruits, this creamy and delicious dish is a festive favourite, perfect for serving with luchi or parathas.
1/4 cup vermicelli (Simui/Sevai) 500 ml milk 1/4 cup sugar 1/2 tsp green cardamom powder 2 tbsp ghee 12-15 raisins 10-12 cashew nuts Pistachios and almonds to garnish Dried rose petals to garnish
Boil the milk and set it aside to cool slightly. Heat ghee in a pan and fry the cashew nuts. Set them aside.
In the same pan, fry the vermicelli on low heat until golden brown.
Gradually add the hot milk to the vermicelli and cook on low heat for 12-15 minutes.
Add sugar and cardamom powder. Stir well until the sugar dissolves.
Transfer the payesh to a serving bowl and garnish with cashews, pistachios, and almonds.
