A classic tomato soup served with croutons can be the perfect antidote for drabby winter afternoons. Make this hearty and delicious soup following these simple steps.
500 gm tomatoes, chopped 1 onion, finely chopped 2 bay leaves 2-3 garlic cloves, minced 2 tbsp butter ½ tsp salt and ground black pepper 1 tsp sugar ¾ cup water or vegetable stock
Put a saucepan on medium heat and add butter to it. Add the bay leaves, onions, and minced garlic and saute for a couple of minutes.
Add the chopped tomatoes followed by the salt and mix well. Cover the pan with a lid and let them cook for 10 minutes.
Open the lid and discard the bay leaves. Use a hand blender to blend the contents of the pan into a smooth puree.
Add water to the saucepan followed by the sugar and ground black pepper. Turn the heat down to medium-low and simmer the mixture till it turns thick.
Pass the soup through a fine mesh sieve. Serve it warm with a drizzle of olive oil on top and enjoy!
