Winter is upon us and warm salads are not only a hearty meal option but also comforting and delicious to eat on days when you only have a few minutes to put a meal together. Use a mix of vegetables you enjoy or what’s in season to make the ultimate salad of all time.

2 potatoes, diced 1 carrot, diced 1 turnip, diced 1 red bell pepper, diced 1 large onion 6-7 whole garlic cloves, unpeeled ¼ cup roasted almonds, chopped 1 cup baby spinach

2 tablespoon lemon juice 1 tablespoon olive oil 1 teaspoon honey mustard 1 teaspoon dried oregano Salt and pepper, to taste

Peel and cut up the onion into thick wedges and place on a lined baking tray along with the remaining diced vegetables.

Drizzle generously with olive oil and place the garlic cloves in the gaps and crevices.

Bake in the oven for 20 minutes at 180°C, until roasted and crisp on the edges.

Remove and toss the vegetable mixture into a bowl, while you prepare the dressing by mixing all the ingredients in a smaller bowl.

Add the almonds and spinach to the roasted vegetables along with a generous drizzle of the dressing and serve when warm.
