If you're a fan of flavourful soups and broths, you need to try this hearty and bracing veggie chilli garlic soup which has the goodness of vegetables and the warmth of Asian aromatics. Here's how to make this soup at home.

– 1 tablespoon vegetable oil – 1 onion, finely chopped – 4 cloves garlic, minced – 1 teaspoon ginger, grated – 1 carrot, julienned – 1 bell pepper – 1 cup cabbage, shredded – 4 cups vegetable broth – 1 tablespoon soy sauce – 1 tablespoon chili sauce – 1 teaspoon sesame oil – Salt and pepper to taste

Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they become translucent. Add Aromatics: Stir in the minced garlic and grated ginger. Sauté for an additional 1-2 minutes until fragrant.

Add the julienned carrot, sliced bell pepper, and shredded cabbage to the pot. Cook for 3-4 minutes, stirring occasionally, until the vegetables begin to soften.

Pour in the vegetable broth, soy sauce, chili sauce, and sesame oil. Bring the soup to a boil.

Reduce the heat to low and let the soup simmer for about 10-15 minutes, allowing the flavours to meld and the vegetables to fully cook.

Taste the soup and adjust the seasoning, adding more soy sauce, chili sauce, or salt if needed. Garnish with sliced green onions and chopped cilantro.
